Black Bean and Corn Salad
Ingredients:
- 1 can (15 oz) black beans, drained and rinsed
- 1 1/2 cups corn kernels (fresh or frozen)
- 1 red bell pepper, diced
- 1/4 cup finely diced red onion
- 2 cloves of garlic, minced
- 2 tablespoons Sadaf Extra Virgin Olive Oil
- 2 tablespoons Sadaf Pomegranate Molasses
- 2 tablespoons Sadaf lime juice
- 1/4 cup chopped fresh cilantro
- 1/4 teaspoon salt
- 1/4 teaspoon Sadaf black pepper
Instructions:
- In a large bowl, combine the black beans, corn, red bell pepper, red onion, and garlic.
- In a small bowl, whisk together the Sadaf Extra Virgin Olive Oil, Sadaf Pomegranate Molasses, lime juice, cilantro, salt, and pepper.
- Pour the dressing over the bean and corn mixture, and toss to combine.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld together.
Serve chilled and enjoy!
Note: This salad is a perfect side dish for a summer barbecue, or as a light lunch option. The combination of sweet and tangy pomegranate molasses with fresh lime juice gives the salad a delicious and unique flavor.
