Roasted Mediterranean Chicken

This recipe is a perfect blend of traditional Mediterranean herbs and spices, like cumin, coriander, turmeric, paprika, and cinnamon, all from Sadaf, that gives the chicken a unique and delicious flavor.   • 1 whole chicken, cut into 8 pieces
  • 1/4 cup Sadaf extra virgin olive oil
  • 1 lemon, juiced
  • 2 cloves of garlic, minced
  • 1 teaspoon Sadaf ground cumin
  • 1 teaspoon Sadaf ground coriander
  • 1/2 teaspoon Sadaf ground turmeric
  • 1/2 teaspoon Sadaf ground paprika
  • 1/4 teaspoon Sadaf ground cinnamon
  • 1/4 teaspoon Sadaf ground black pepper
  • 1/4 teaspoon Sadaf salt
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint


  1. Preheat the oven to 375°F.
  2. In a small bowl, mix together the olive oil, lemon juice, garlic, cumin, coriander, turmeric, paprika, cinnamon, black pepper, and salt.
  3. Place the chicken pieces in a large baking dish and pour the marinade over them, making sure each piece is well coated.
  4. Roast the chicken in the oven for 45-50 minutes, or until the internal temperature reaches 165°F.
  5. During the last 10 minutes of cooking, sprinkle the chopped parsley and mint on top of the chicken.
  6. Remove from the oven and let it rest for 10 minutes before serving.
