Sautéed with onion, garlic, and spices, the hibiscus mimics the texture of shredded meat and pairs perfectly with melted cheese (or vegan cheese). Ideal for Taco Tuesdays or any plant-based dinner.
Ingredients:
2 cups water (for boiling)
1 small onion, finely chopped
2 garlic cloves, minced
1 tbsp olive oil
1/2 tsp ground cumin
1/4 tsp smoked paprika
Salt to taste
Corn or flour tortillas
Shredded cheese or vegan cheese
Instructions:
Boil hibiscus flowers in water for 10 minutes. Drain and rinse thoroughly to remove bitterness.
In a pan, heat olive oil and sauté onion and garlic until translucent.
Add hibiscus, cumin, paprika, and salt. Cook for 5-7 minutes until slightly crisp and flavorful.
Heat tortillas on a skillet. Add hibiscus filling and top with cheese. Fold and grill until golden and crispy on both sides.
Serve with salsa, guacamole, or a dollop of sour cream.
Pro Tip: Add a splash of lime juice or chopped jalapeños for an extra zing.
