Saffron & Garlic Mashed Potatoes

Ingredients:

  • 2 lbs Yukon Gold potatoes, peeled and quartered
  • 1/4 teaspoon Sadaf Saffron Threads
  • 1/4 cup milk
  • 1/4 cup heavy cream
  • 4 tablespoons unsalted butter
  • 2 cloves of garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley for garnish

Instructions:

  1. In a large pot, add the potatoes and cover them with water. Bring to a boil and then reduce the heat to a simmer. Cook for 15-20 minutes or until the potatoes are fork-tender.
  2. In a small saucepan, heat the milk and cream over medium heat. Add the saffron threads and let them steep for 5 minutes.
  3. Drain the potatoes and return them to the pot.
  4. Mash the potatoes with a potato masher or a fork.
  5. Add the saffron-infused milk mixture, butter, minced garlic, salt, and pepper to the pot.
  6. Mix everything together until the potatoes are smooth and creamy.
  7. Garnish with chopped fresh parsley before serving.

Note: You could also add some grated Parmesan cheese or sour cream for an added flavor and texture. These mashed potatoes are perfect as a side dish for roasted meats, poultry or fish.
